Badel Hrvatska Stara Šljivovica 1L is one of the most recognisable expressions of Croatian plum rakija, produced by historic Croatian spirits house Badel 1862.
At the heart of this Šljivovica is the Bistrica plum, an indigenous Croatian variety traditionally used for producing plum brandy. The fruit is allowed to fully ripen before harvesting, developing the sweetness and aroma required for distillation.
During production, selected ripe plums undergo controlled fermentation at low temperatures using specially selected yeasts to preserve as much of the natural fruit aroma as possible. This is followed by careful distillation to produce a spirit with the characteristic profile of traditional Croatian Šljivovica.
Ageing then plays an important role. The distillate initially matures in newer barrels before continuing its development in traditional Slavonian oak barrels for at least 12 months. During this period, Badel says the Šljivovica develops its distinctive aromatic profile together with its characteristic smooth and fruity taste.
The result is considerably different from a young, clear plum rakija. Barrel maturation gives Badel Stara Šljivovica additional colour, structure and complexity while maintaining the ripe plum character at the heart of the spirit.
The terminology is also important. Šljivovica comes from šljiva, meaning plum, and refers specifically to plum-based rakija. Internationally, the category is also widely known as Slivovitz or Sljivovica, making Badel Stara Šljivovica a classic example of traditional Croatian plum brandy.
